How are our olives harvested?

The method of collecting it olive is done with the hand. Every year the olive harvester cleans the trees by cutting off the branches that bore the fruit. Thus, the next year's harvest is made on new branches. This artisanal method allows us to maintain the quality of our fruit and guarantee a delicate aroma as well as one low level of acidity.

The olives are pressed within 24 hours.

Harvest season.

Starting from end of October each year, the olives are collected with great care and shipped directly for compression, ensuring their perfect condition.

Depending on the desired result in taste and acidity, we harvest the olives at an early stage for an excellent fruity taste, sacrificing quantity over quality or later depending on the prevailing climatic conditions to produce our extra virgin olive oil, which has a more bittersweet taste.

Cold depression

Olives, for all types of olive oil, are cold pressing in a state-of-the-art 2-phase oil mill, without surpassing them 27°C.

The result is: unique olive oil of its kind, full of aromas and flavor.

Olive oil bottling

After being pressed, the olive oil is stored in double-coated stainless steel tanks to allow the natural sedimentation under ideal conditions, before it reaches your table.

  • Our company has fully automated production units as well as a special production line for special packaging.
  • We undertake the standardization of your own olive oil in containers of your choice.
  • We undertake the standardization with extra virgin olive oil, according to the quality characteristics you choose, both in conventional and organic olive oil.

 

Storage & Transport

Olive oils, like all our other food products, are stored in food-safe packaging and storage areas with ideal conditions, as well as transported with certified food transport companies.
