Halkidiki green olives are a table variety grown mainly in the region of Halkidiki, Kavala, Serres as well as on the coasts of northern Greece. It is a stone fruit variety with an average fruit weight of 6 – 10 g or more (100 – 165 pieces / kg). The shape of the fruit is asymmetrical, oval, elongated with a papilla at the top. The extraction of the olives is done with an alkaline solution and then the fruits are immersed in brine where they undergo lactic fermentation. The whole process of secretion and fermentation is relatively short, 2 – 3 months but requires experience and technological knowledge.
The final product, the Halkidiki Green Olive, is: green-yellow in color, firm and crisp, mildly salty, slightly bitter and slightly acidic. It is placed in a variety of containers in a brine solution with sea salt, water and lactic acid, citric acid and ascorbic acid as preservatives. From the green olives of Halkidiki, olives stuffed with many different fillings such as pepper, almond, garlic, feta cheese are produced.
